Vata Vegetables

Vata pacifying vegetables will generally be sweet, moist, and cooked. Root vegetables are grounding and stabilizing because they grow underground. This is especially beneficial for Vata. Avoid dry, rough, cold and most raw vegetables. If for any reason you must have any of the Vata-aggravating vegetables eat them in small quantities at midday when digestive strength is its strongest. Thorough cooking or a well-spiced, oily dressing can help diminish some of the dry, rough qualities of these foods.
